The Institute of Hotel Management, Catering and Nutrition, Pusa, has carried out a study which shows a secret ingredient a lot of Delhi street foods contain: faeces.

According to a DNA India report the study found that street food in many localities of West and central Delhi is contaminated with faeces and contains very high amounts of the bacteria E. Coli. Combined, these elements can cause severe infections.

DNA further reported that Dr. Arpita Sharma of IHM Pusa conducted a survey in which 100 people consumed Delhi’s most common street foods and then went through a microbial analysis. The report found that Delhi’s unclean water is the main factor responsible for the contamination. The second factor is unhygienic food preparation and serving conditions. It further adds that the contamination also depends on the weather, the summer and rainy seasons being the worst since bacteria multiply more quickly.
